Instructions
Step 1
Heat olive oil in a skillet, cook sausage until browned, breaking it apart.
Step 2
Add zucchini and bell pepper, sauté until softened (about 5-6 minutes).
Step 3
Stir in garlic and oregano, cook briefly until fragrant.
Step 4
Toss in spinach, let it wilt.
Step 5
Remove from heat, sprinkle feta over top.
Step 6
Garnish with parsley or basil, serve as-is or over quinoa/rice.
