Kàitlyn’s GF vegan “Mom’s Pancakes”
Mom’s pancake recipe (veganized & GF)
Ingredients:
3 1/2 cups milk (I use good karma unsweetened flax milk with protein)
6 tbsp flaxseed + 12 tbsp water
4 cups Bob’s red mill all purpose gf flour (red bag)
4 tsp baking powder
1 1/2 tsp salt
2/3 cup olive oil
Directions:
Preheat your frying pan on low/medium heat (I use level 4 on my stove). In a large bowl or baking measuring cup, add milk, flaxseed, water, and whisk. Next add flour, whisk a little, then add baking powder and salt, whisk a little more, then add olive oil and do your final whisk. Whisking at all these stages helps prevent flour lumps which are not pleasant in a cooked pancake. Add oil to the pan and make sure the surface is covered, then fry.
