Instructions

Step 1
Crumble and fry Sausage, stir and separate meat so it can fry in small pieces. Remove from heat once done and drain and use potato masher to mash in small pieces.

Place Sausage in a frying pan and add onion, green chilies, and tomatoes. Heat on medium temp just til sausage and veggie are heated through and stir frequently.

Measure 2 cups of eggs and beat. Add Eggs with the sausage veggie mixture and cook and remove from heat and mash again with potato masher.

Place two tablespoons of mixture onto one tortilla, tear american cheese slices into two even portions. Place the cheese on top of the tortilla

If made ahead of time, wrap in plastic and store in the fridge or freezer, then heat up in the microwave 30 secs or longer if frozen.
