What makes this Omelette SO special, you might ask? Well, this omelette has Mexican fiesta flavors with promise of healthy and carb-free breakfast! Actually, not just carb-free but also with serving of protein, and healthy dose of veggies! This recipe is inspired from IHOP's famous Chicken Fajita Omelettes. In simple words, it is everything Mexican breakfast fajitas wrapped in egg omelette!! Spicy salsa, seasoned fajita's signature pepper and onions, chicken, avocado, cheese and creamy sour cream. What not to like?! Chicken Fajita Omelette or omelet with side of fried Serrano pepper is my husband's favorite breakfast whenever... I mean, really, whenever we get chance to eat at IHOP. When I saw him loving it so much, I started making it at home. (You know me! Nothing is hidden from you. I can't resist creating all of my restaurant favorites at home.) So, I thought why not you guys have this recipe too! Plus, who would not want a spicy, protein-licious veggie-full breakfast, at home without spending time and money at diner?! So, consider it healthy on pocket too! ;-) Ask me? My family will happily eat it every Sunday's brunch! No special occasion needed! :) Honestly, Fajita is a kind of Mexican food with which no one will mind eating veggies! Isn't it? :) My first intro to signature pepper-onions of fajitas were in local Mexican bbq restaurant. It was raining heavily that day and we were late running weekend errands.... So while doing groceries in local farmer's market.... rainy season, aroma of fresh Mexican bbq, perfume of seasoned peppers-onion dragged us to that Mexican bbq place. Vishal enjoyed mesquite bbq chicken.... I could not stop eating bbq tofu (yes, bbq tofu) with fajita seasoned peppers and onion, pico de gayo and corn salsa! Oh yumm! I'm not so crazy for Mexican food for nothing! Love love the spices, chilies and mouthwatering flavorful combinations. PS: I have shared that BBQ Tofu in a salad last summer. Here is the link if you wish to explore. :) Even though IHop's Chicken Fajita Omelette is my inspiration behind this recipe. I'm not sure if calling it a copycat will be right because I did not try to copy the chicken prep in this fajita like IHop. Honestly, I use any kind of cooked leftover chicken available in the refrigerator. Or even a few chicken strips (bought for salad) also work fine in these. The star of these fajitas is clearly lite and delicious egg omelette and healthy veggie fillings that goes in and top of the fajita. That's what makes it addictive. Other than my love for Mexican cuisine and making everything at home for Vishal..... this breakfast Omelette is also dear to me because I grew-up eating omelettes for breakfast. Back then, my mom and myself both were fan of omelettes. Since I started cooking so much for blog... every mother's day or any day I cook good food... I wish to serve it my mother which I seldom did growing up. ;) If today, I get chance to cook this Omelette for mom, she will LOVE the flavors I've putting together. And she has no idea of Mexican cuisine what-so-ever! We both are savory food junkies! (in hindi "chatpatae khana ke shaukien") So, if I get chance to visit India, I would love to share this breakfast with my mom for mother's day or any day of the year! It's been 3+ years since I visited India... and specially on holidays I miss home and parents so so much! This breakfast is for you mom. Love you always! Chicken Fajitas may look like some work but serving these for breakfast is not so much work. First and foremost, it is best to use leftover or pre-cooked chicken which cuts the cooking time. Omelettes and peppers are ready in 15 minutes. I also make salsa at night or if time pressed then use store bought with some fresh chopped tomato and onions. I make omelettes just before serving... and serve them fajita-style in breakfast. I mean, everything not assembled - peppers and onions, salsa, heavy cream, cheese, avocado, chicken in bowls with warm omelettes in plate to make your own fajita omelettes. Just for blog, I assembled the fajita to give you idea of how delicious these flavors even look together, of course they taste even more delicious! Actually, how could a food so colorful and fresh taste no delicious!!?? Nothing is very hot spicy in these fajitas. So these are also good for kids. Look when you see'em loading their omelettes with chicken, salsa, avocado (may be veggies too.. :)) and sour cream! A good serving of protein and veggies right at the start of the day! What else will you ask for! ;-) PS: Setting the "chicken" theme for this week. Last whole week we were on meatless diet. I'm okay with it, but carnivore in my family demanded nothing but chicken!
