Instructions

Step 1
* preheat oven to 420 degrees F

* cube 160g skinless chicken breast into

1-inch pieces and place in a small bowl
Step 4
* add 1/2 tbsp balsamic vinegar, ½ tsp smoked paprika, ½ tsp salt, ½ tsp garlic powder, and ½ tsp black pepper to the bowl and mix
Step 5
* (optional) let it marinate for at least 20 minutes (the longer, the better)
Step 6
* lightly spray a baking sheet with avocado oil spray (or any non-stick cooking spray).
Step 7
* add the chicken, 3oz sliced rainbow carrots, 50g broccolini (5 small pieces), 100g diced sweet potato, 1/2 a sliced yellow bell pepper (/0g), and sliced red onion evenly on the baking sheet
Step 8
* spray the broccolini, onions & peppers with avocado oil spray and season with paprika, dried thyme (or fresh herbs), garlic powder, salt, and pepper
Step 9
* spray the carrots and sweet potatoes with avocado oil spray and season with cinnamon & paprika
Step 10
* bake at 420°F for 25-30 minutes, flipping the chicken and vegetables halfway through cooking to ensure even roasting.
Step 11
* check that the chicken reaches an internal temperature of 165°F using a meat thermometer
Step 12
* drizzle with warm honey dijon dressing
