Fluffy Cottage Cheese Cloud Bread - Low-Carb & Gluten-Free

Ingredients:
3 large eggs, separated
1 cup cottage cheese
1 tsp baking powder
½ tsp cream of tartar (optional, for extra fluffiness)
Pinch of salt
Step 1: Preheat & Prepare
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a clean bowl, beat egg whites with cream of tartar and salt until stiff peaks form.
In a separate bowl, blend cottage cheese, egg yolks, and baking powder until smooth.
Gently fold the egg whites into the cottage cheese mixture, being careful not to deflate the whites.
Spoon mixture onto the baking sheet in 6 equal rounds. Bake for 25-30 minutes until golden and puffed.
Let cool slightly before using as bread or sandwich base.
Tips: Use a hand mixer for best results with egg whites.
Store leftovers in an airtight container in the fridge for up to 3 days.
Toast lightly before serving for extra texture.
