Hoisin Chicken Stir-Fry

Ingredients
6 servings
3 Tbspvegetable oil
or peanut
500gboneless skinless chicken breasts
cut into 3/4-inch chunks
1onion
medium, cut in half and sliced
1red bell pepper
cored, seeded, and thinly sliced
peas
carrots
sliced
crushed red chile flakes
1 tspfresh ginger
minced
⅓ cuphoisin sauce
2 Tbswater
½ cupdry-roasted peanuts
or cashews
1 Tbspsoy sauce
garlic
Instructions
Step 1
Heat oil in a large skillet over medium/high heat.
Step 2
Sprinkle the chicken with salt and pepper, add it to the oil, and cook, stirring frequently, so that all sides brown, 2 to 3 min.
Step 3
Add the veg for 4 to 6 min.
Step 4
Add the onion and cook for 2 to 3 min.
Step 5
Sprinkle in some red chile flakes.
Step 6
Add the ginger, if using.
Step 7
Reduce the heat to medium low and stir in the hoisin sauce and water. Simmer for 1 min
Step 8
Sprinkle with the peanuts or cashews and serve over rice.
