Instructions

Step 1
Preheat oven to 200°C.
Step 2
Wash vegetables and dice them (make potatoes and beetroot pieces small because they take longer to bake).
Step 3
Put all vegetables in a large bowl and add seasoning. Add olive oil and mix everything well so that the vegetables are covered in oil and seasoning from all sides.
Step 4
Spread vegetables out on a tray lined with baking paper. There should only be one layer of vegetables.
Step 5
Roast vegetables in preheated oven. Leave them for the first 20mins, then turn and mix so that they get roasted evenly and bake for another 15mins, until vegetables are golden brown.
Step 6
Grill or gratin for 2-3 more minutes.
