Ingredients

3 cupschicken breast
cooked, shredded or cubed
1green bell pepper
medium, diced
1red bell pepper
medium, diced
0.5onion
medium, optional, or replace with 1 tsp onion powder for fewer carbs
2cloves garlic
minced
½ cupsour cream
4 ozcream cheese
softened
½ cupheavy cream
1 tsppaprika
½ tspcumin
optional, for Tex-Mex flavor
salt
to taste
pepper
to taste
1 ½ cupsshredded cheese
cheddar, Monterey Jack, or Mexican blend
1 Tbspolive oil
or butter
Instructions
Step 1
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Step 2
Shred or cube pre-cooked chicken and set aside.
Step 3
In a skillet, heat olive oil. Sauté bell peppers, onion, and garlic until softened (about 5 minutes).
Step 4
In a bowl, whisk together sour cream, cream cheese, heavy cream, paprika, cumin, salt, and pepper until smooth.
Step 5
In the baking dish, combine chicken, sautéed veggies, and creamy sauce. Mix well.
Step 6
Top with shredded cheese.
Step 7
Bake uncovered for 20–25 minutes, until cheese is bubbly and golden.
