Harissa aubergine ragu - Good Food

Instructions

Step 1
Heat the oven to 200C/180C fan and line a large baking tray with baking parchment. Mix the spices together in a large bowl with the oil. Add the aubergines and toss well to coat, then roast for 30-35 mins until browned and tender. Set aside.
Step 2
Meanwhile, for the sauce, heat the oil in a large saucepan over medium-high heat. Add the onions with a pinch of salt and cook for 8-10 mins until softened and translucent but not colored. Add the garlic and cook for 1-2 mins until fragrant.
Step 3
Add the harissa, passata, and sugar with salt and pepper to taste, stir well, and reduce the heat to medium. Cook without a lid for 30 mins until the sauce has reduced.
Step 4
Add the roasted aubergines to the pan and cook for a further 5 mins. Adjust seasoning to taste.
Step 5
Serve the ragu with pasta, rice, crusty bread, or flatbreads. Optionally, stir in a generous knob of butter with pasta for extra silkiness.
