Instructions
Step 1
Preheat your oven to 200°C.
Step 2
Dice your potatoes into bite-sized pieces and add them to a cooking tray with a drizzle of olive oil and a pinch of salt.
Step 3
Roast the potatoes in the oven for 20-25 mins.
Step 4
Add the diced courgette to the tray and top with salmon fillets.
Step 5
Press the breadcrumbs mixed with grated cheddar cheese onto the top of the salmon.
Step 6
Roast for another 15 mins until the salmon is cooked through and flaky.
Step 7
While the salmon is cooking, prepare the garlic & parsley oil by mixing chopped garlic, parsley, olive oil, and salt in a small bowl.
Step 8
Once cooked, serve the Provencal-style crumbed salmon over the roasted vegetables and drizzle with the garlic & parsley oil.
