One‑Pot Chicken & Rice
Serves: ~6 portions
Ingredients:
- 1 lb boneless chicken thighs, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 2 cups white rice
- 4 cups chicken broth
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt & pepper to taste
- 1 cup frozen peas
- Optional: parsley for garnish
Instructions:
1. Heat oil in a large pot over medium heat.
2. Sauté onion, garlic, bell pepper until soft (~3–4 min).
3. Add chicken; season and brown (~5–7 min).
4. Stir in rice to coat, then pour in broth.
5. Bring to boil, cover, reduce heat, simmer 15–20 min until liquid is absorbed.
6. Stir in peas, re-cover, let stand 5 minutes.
7. Fluff rice, garnish, and serve.
