Instructions

Step 1
Preheat oven to 450 degrees Fahrenheit and line a rimmed baking sheet with parchment paper, silpat, or lightly oiled foil
Step 2
Cut squash in half lengthwise; cut off ends and scoop out seeds. Cut into 1/2" thick half moons
Step 3
In a medium bowl, mix together maple syrup, olive oil, and chili powder. Add squash and toss to coat
Step 4
Place squash in a single layer on a prepared baking sheet
Step 5
Season lightly with salt and pepper
Step 6
Roast until browned, about 15 minutes; flip and roast about 10 minutes more
Step 7
Transfer to a platter and garnish with roasted, salted pepitas
