Corn and Capsicum Relish

A tangy and sweet relish made from corn kernels, red and green capsicums, and brown onion, perfectly seasoned with apple cider vinegar and spices. Ideal for enhancing dishes.

Instructions

Step 1
Mix olive oil in a pot and heat it over medium flame.
Step 2
Add the diced onions, red capsicum, and green capsicum to the pot. Sauté until the onions turn translucent.
Step 3
Stir in the corn kernels, apple cider vinegar, caster sugar, brown sugar, turmeric, mustard powder (or paste), salt, and white pepper.
Step 4
Cook on low flame while stirring occasionally, for about 20-30 minutes until the relish thickens.
Step 5
Mix the cornflour with water and pour into the pot. Stir well and let it simmer for another 5 minutes.
Step 6
Remove from heat and let it cool before serving or storing.
