Instructions

Step 1
Preheat oven to 180 degrees and line a baking tray with baking paper.
Step 2
Cut the eggplant in half and place them flat side down on the baking paper and roast for 45 minutes until soft.
Step 3
Remove the eggplant from the oven, scoop the flesh into a bowl and discard the skin.
Step 4
Add garlic cloves to a food processor, along with the eggplant, spices, and tahini. Blitz until you reach the desired consistency (either chunky and rustic or very smooth).
Step 5
Scoop into a serving dish and drizzle over the olive oil and parsley to garnish. Serve with seedy crackers, carrot and celery sticks.
