1 lbground beef

1onion
small, diced

1green bell pepper
diced, optional

1 x 1.25 ozChili-O seasoning mix
packet

1 x 14.5 ozcan diced tomatoes
undrained

1can beef broth

1 x 1.5 ozcan tomato paste
optional, for thicker sauce

1 ½ cupselbow macaroni
uncooked

1 cupsshredded cheddar cheese

1 x 15 ozcan kidney beans
drained, optional

Garlic powder

Instructions
Step 1
Brown the meat. In a large skillet or Dutch oven over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onion is softened.
Step 2
If using, add the diced green bell pepper and cook for a few more minutes.
Step 3
Drain the fat. Drain any excess grease from the pan and return the meat mixture to the skillet.
Step 4
Season the beef. Stir in the Chili-O seasoning mix. For extra flavor, add additional seasonings like cumin or garlic powder at this stage and cook for a minute or two until fragrant.
Step 5
Add the liquids. Pour in the undrained diced tomatoes, beef broth, and tomato paste (if using). If adding kidney beans and/or corn, stir them in now.
Step 6
Cook the macaroni. Bring the mixture to a boil. Stir in the uncooked elbow macaroni and reduce the heat to medium-low.
Step 7
Simmer until tender. Cover the skillet and let it simmer for about 10–15 minutes, or until the macaroni is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
Step 8
Add the cheese. Remove the skillet from the heat. Sprinkle the shredded cheese over the top, cover, and let it sit for about 5 minutes, or until the cheese is melted and gooey.
Step 9
Serve. Garnish with extra cheese, sour cream, or chopped onions if desired, and serve immediately.
