Instructions

Step 1
Preheat the oven to 200°C, 180°C fan.
Step 2
Mix the bulgur wheat and veg stock in a roasting tin, then top with the red onion and halloumi.
Step 3
Roast in the oven for 25 minutes until the halloumi is golden brown and crisp on top.
Step 4
Stir through the olive oil, lime juice, coriander, spinach, mango, and a scrunch of black pepper.
Step 5
Slice roughly one small avocado per person and mix through the salad.
Step 6
Serve immediately as a main or generous side salad. If having as a lunch over several days, save slicing the avocado until just before serving.
