Instructions
Bacon and Onion sauté
Step 1
In a skillet over medium heat, sauté the bacon until crispy.
Set aside.
Step 2
Reduce heat to low and sauté onion in bacon fat. About 10 minutes.
Sauté Eggs
Step 3
Fill a deep skillet with 3-inches of water and add vinegar.
Step 4
Place over medium heat and bring to a bare simmer.
Step 5
Break an egg into a ⅓ measuring cup and gently tip into water.
Step 6
Repeat with remaining eggs.
Step 7
Poached to taste, 3 to 4 minutes
Step 8
Remove with slotted spoon, transfer to a plate and trim neatly.
Step 9
Cover and keep warm.
Step 10
Add peas to skillet with onions and toss until warmed.
Step 11
Add tomatoes and bacon bits and season with salt and pepper.
To Serve:
Step 12
Transfer pea mixture to warmed serving bowl.
Step 13
Nestle eggs into peas, and sprinkle with parsley.
