Step 1
Preheat oven to 300°F. In a glass pie plate, add flour, salt, and pepper. Mix together and dredge individual ribs thoroughly.
Step 2
In a large skillet, sear ribs on each side until golden brown, remove from heat, and set aside.
Step 3
Pour meat drippings into a 5-qt Dutch Oven, add onions, carrots, and celery, and cook until veggies appear carmelized.
Step 4
Next, add garlic, tomato paste, wine, spices, and just enough beef stock to submerg meat. Cover and bake in oven for 4 hours
Step 5
Remove ribs from liquid and puree vegetables until smooth. Stiffen puree with corn starch and stir until thickened. Add meat back in, and place uncovered Dutch Oven back into the oven. Increase heat to 450°F and cook for 5 minutes.
Step 6
Remove Dutch Oven and allow contents to cool for a few minutes. Serve hot on a bed of garlic mashed potatoes or cooked egg noodles.
