Step 1
1. Skin the tomatoes by placing them in a bowl of boiling water for 1 minute. Check the skins for peeling then plunge into very cold water, Halve and remove the seeds with a teaspoon; roughly dice. Halve the onion, remove the root and slice thinly.
Step 2
2. Remove the stalks from the end of the beans. If not using preground, grind the cumin in the coffee grinder or pestle and mortar. Boil a large saucepan of salted water and throw in the beans. Leave to simmer over a low heat for 3-4 minutes, then drain.
Step 3
3. Put the beans back into the same pan, mix in the other prepared ingredients and add a generous drizzle of extra virgin or ordinary olive oil and seasoning.
Step 4
4. To serve, pile onto a warmed serving plate or into a bowl.
