Instructions

Step 1
Cut the corn kernels close to the cob.

In a blender or mixer, blend the corn, eggs, oil, and a little milk until smooth.

Add the sugar and baking powder, and mix gently until combined.

The batter should be slightly runny — that’s what gives it its creamy “pudding” layer on the bottom.

Pour into a greased baking dish and bake at 180°C (350°F) for about 35–40 minutes, until golden on top and set in the center.

Let it cool slightly before serving. Enjoy it warm or at room temperature!
