Instructions

Step 1
Brown ground turkey in pan with olive oil on medium low heat. Break up meat and continue to stir while cooking.
Step 2
Once meat is mostly done, add sweet potatoes and onions with seasoning, salt, pepper, and water to the pan. Mix well and cook covered for 10 minutes stirring occasionally.
Step 3
After 10 minutes, add cilantro and tomatoes with diced green chilis, stir well, and allow to cook covered for another 5 minutes.
Step 4
Add in enchilada sauce and stir, then top with cheese and cover to allow cheese to melt (about 3 minutes)
Step 5
Divide into 4 containers
