1 Tbspolive oil
2cloves garlic

feta cheese
1 cupcanned artichoke hearts
quartered, drained
½ cupcherry tomatoes
halved
¼ cupkalamata olives
halved
1 teaspooncapers
optional
¼ tsporegano
or Italian seasoning
¼ cuplow-sodium chicken broth
or dry white wine
1 Tbspfresh lemon juice
fresh parsley
or basil, for garnish
Instructions
Step 1
Sauté red peppers and mushrooms. Remove and cook chicken.
Step 2
Season chicken with salt and pepper and coat with bread crumbs.
Step 3
Heat olive oil in a skillet over medium heat. Add chicken and sear until golden. Remove and but in ninja. Bake @ 350 for 12 - 15 minutes
Step 4
In the same skillet, sauté garlic for 30 seconds. Add artichokes, tomatoes, olives, capers, oregano, and broth/wine, red peppers and mushrooms. Simmer 3–4 minutes.
Step 5
Spoon veggies on bottom of plate and top with chicken. Add feta cheese, Drizzle with lemon juice and garnish with herbs.
