Three-Seed Crackers

Makes about 25 5.5cm crackers. These homemade three-seed crackers are simple and fun to make. Customize them with various seasonings, and enjoy a healthy, crunchy snack at any time.

¼ cuppumpkin seeds
raw
¼ cupraw sunflower seeds
¼ cupsesame seeds
0.5 inchfresh turmeric
piece, grated, or 1/4 teaspoon ground
⅓ cupground flaxseeds
or linseeds
2 tablespoonsfresh parsley
minced
1 tablespoonnutritional yeast
or yeast flakes
1 ½ teaspoonswhite miso paste
½ teaspoononion powder
1 teaspoondried basil
dill, oregano or thyme, optional
Instructions
Step 1
Preheat the oven to 250°F/120°C/gas mark 1/2.
Step 2
In a blender or food processor, grind the pumpkin seeds, sunflower seeds, 1/4 cup/38g of the sesame seeds, and the turmeric into a powder.
Step 3
Add the remaining ingredients, except the remaining sesame seeds, and pulse to combine and form a dough.
Step 4
If the dough is too dry, add up to 1 cup/250ml of water, 1 tablespoon at a time.
Step 5
Spread out the dough flat on a baking sheet lined with a silicone mat or baking parchment.
Step 6
Top with another piece of baking parchment and roll out the dough evenly and thinly with a rolling pin or by pressing with your hands into approximately a 12 x 10-inch/30 x 25cm rectangle.
Step 7
Remove the top layer of baking parchment. Sprinkle with the remaining 1/4 cup/38g of sesame seeds and lightly press them into the cracker dough.
Step 8
Use a sharp knife to cut the crackers into the size you desire.
Step 9
Bake until lightly browned, about 3 hours.
Step 10
For a crisper cracker, leave them in the oven with the heat turned off for a while longer.
Step 11
Once completely cooled, the crackers may be stored at room temperature in a tightly covered container.
