½ cupalmond flour
1 tspbaking powder
½ tspbaking soda
¼ tspsalt

½ cupplain Greek yogurt
2% or whole

or pure maple syrup

Instructions
Step 1
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
Step 2
Whisk dry ingredients (flours, baking powder, soda, salt) in a small bowl.
Step 3
Whisk wet ingredients (eggs, olive oil, yogurt, honey/maple, orange zest, juice, vanilla) in a large bowl.
Step 4
Combine gently — stir dry into wet until just mixed. Batter should be silky and slightly thick.

Fill cups ¾ full.

Until tops are golden and spring back lightly.
