Step 1
Season chicken (and shrimp if using)In large dutch oven, brown sausage and chicken in oil. Remove to a small bowl. Add onion, celery, and peppers and saute until softened (about 7-9 minutes). Stir in garlic and Cajun seasoning (see Cajun Blend recipe or use any commercial Cajun blend). Continue to saute another 2-3 minutes. Stir in tomatoes, rice, and chicken stock. Simmer 20 minutes or until rice is cooked through. You can reduce the simmer time if using leftover rice. Stir chicken and sausage back in. Optional addition: add 1 cup shrimp (raw shrimp-cook with the chicken and sausage; pre-cooked—add at the end).
