Ingredients

2 Tbspbutter
1onion
medium, peeled & diced
2carrots
medium, diced
2celery stalks
diced
6 glovesgarlic
minced
¼ cupflour
6 cupschicken broth
1 lbboneless skinless chicken breast
1 cupwild rice
uncooked, rinsed & drained
1 Tbspfresh rosemary
2bay leaves
2 cupsmilk
2 handfulsbaby spinach
roughly chopped
salt
to taste

to taste

Instructions
Step 1
Melt the butter in a large scockpan on meduim-hight heat. add onions and saute for 4 minutes, sirring occasionally.
Step 2
Add carrots, celery, and garlic and saute for 3 more minutes, stirring occasionally.
Step 3
Add in the flour and saute for 1 more minute, stirring occasionally.
Step 4
Giadually pour in Chicken stock, stirring the soup frequently as you pour so that clumps of flour can melt into the broth.
Step 5
Add Chicken, mushrooms, rice, rosemary, and bay leaves then stir to combine.
Step 6
Let the soup contiue cooking until it reaches a simmer. Then reduce the heat to medium-low to keep the simmer.
Step 7
Cook for 40 to 50 minutes or until the rice is tender. stir the soup every 5 to 7 minutes for the bottom does not burn.
Step 8
Carefully remove the chicken breast and shred it then re-add it tothe soup.
Step 9
Stir in the milk and spinach until combined.
Step 10
Salt to taste

Pepper to taste
