Harissa-Spiced Pork Loins with Couscous and Green Beans

Instructions
Step 1
Mix harissa, finely chopped preserved lemon rind, minced garlic cloves, grated ginger, lime juice, and honey. Rub over pork loins and marinate for 10 minutes.
Step 2
Cook couscous by pouring boiling water over it, cover, and let steam for 5 minutes. Fluff with a fork.
Step 3
In a pan, sear pork loins over medium-high heat for 4 minutes per side until cooked (internal temp 145°F). Rest.
Step 4
Steam or sauté 200g green beans with 1/2 sliced red onion for 5 minutes.
Step 5
Serve pork sliced over couscous with beans. Dollop 2 tbsp Greek yoghurt mixed with extra harissa on top.
