large, pitted, peeled and diced

brown rice
substitute, or skip rice all together if desired
½ tspolive oil
chicken stock
water

Instructions
Step 1
Marinade chicken thighs for 30 mins to overnight if you have time.

extra virgin olive oil1 Tbsp
pink sea salt½ tsp
black pepper¼ tsp
ground cumin¼ tsp
paprika¼ tsp
garlic powder¾ tsp
garam masala¼ tsp
tumeric¼ tsp
clove¼ tsp
allspice¼ tsp
nutmeg⅛ tsp
cinnamon⅛ tsp
Step 2
Heat up pan to medium-high heat, add oil & chicken, skin side down.
Cook until GBD (golden brown & delicious) Flip to other side and cook until GBD as well. Add in chicken, vegetable stock, or water. Cover and turn fire down low to simmer for 30 mins.

Step 3
Wash and rinse rice 2-5 times to remove some of the starch.
Add 2 cups of water to 1 cup of rice, 1/2 tsp olive oil, and pinch or two of salt. Bring to a boil, then cover and reduce heat to simmer for 15 mins. Don't forget to set your timer! Turn off heat and let rest for another 3-5 minutes.

Avocado & Lime Sauce
Mix & Blend: rough chop 1/2 cup of red cabbage rough chop cilantro sour cream, vegannaise, lime juice, avocado, and salt to taste. The consistency of this sauce is super creamy so keep on blending until it is smooth and dip/pourable. _Add as much or as little of something, share with me how you modified it to suit your fancy!
