For a cheese sauce, make a basic bechamel cheese sauce leaving out the salt. I used this recipe: https://s.samsungfood.com/crgsp Switch up the seasonings for whatever flavor you want Make it Vegan! - Change the dairy ingredients to your favorite non-dairy ingredients to make this vegan. Or buy a pre-made vegan cheese sauce.

Instructions

Step 1
Chop all vegetables. Set aside the garlic, but mix the rest together in a bowl.

Mix all seasonings together

Step 3
Heat a thin layer of oil in a large deep saute pan
Step 4
Put about 3 tablespoons of oil on the veggies and mix. Then add and mix in the seasoning mix.
Step 5
Put the minced garlic in the heated pan and cook until fragrant. About 1 minute.
Step 6
Preheat oven to bake at 350°F
Step 7
Add the veggies to the pan. Stir periodically. Turn off the heat once they're cooked.
Step 8
Add the can of beans including the liquid to the veggie mix. If you want it to be thicker, add some cornstarch or flour mixed into water (slurry) into the mix at this point.

Make your bechamel cheese sauce if you are making it from scratch. You may add salt if you want to, but the salt from the bean liquid should be enough. This is the recipe I used. https://s.samsungfood.com/crgsp

Move veggie mixture into a baking or casserole dish.
Step 11
Evenly pour the cheese sauce over the veggies in the baking dish.
Step 12
Bake for about 20 minutes. Cover if you notice the cheese browning.
Step 13
Remove from oven. Top with fried onions. Let stand for about 10 minutes before serving. Or serve portions and let stand for 2 minutes.
