12mint leaves

roughly chopped with stems
2 tablespoonslime juice
1 tablespoontoasted rice powder

Instructions
Step 1
Put chicken in small sauce pan and cover with water, stirring over medium heat until chicken is opaque but still soft. Use spatula or spoon to break meat up into small clumps. Drain off water, then stir in fish sauce and sugar until dissolved. Remove from heat and let cool.

Once chicken is cool, add seasonings in this order:
