Ingredients
4 servings
15 mlsextra virgin olive oil
500 gmspotato gnocchi
1brown onion
diced
2 clovesgarlic
crushed
500 gmslean beef mince
1 sprinklesalt
1 sprinklepepper
2 tspItalian herbs
500 gmsmushrooms
sliced
1zucchini
grated and excess moisture removed
40 gmstomato paste
125 mlschicken stock
1 x 400gtin of diced tomatoes
130 gmsnatural yoghurt
high protein
60 gmsbaby spinach
100 gmsparmesan cheese
Instructions
Step 1
Cook gnocchi according to packet instructions.
Step 2
2. Meanwhile, heat oil in a large pan over medium heat and add onion and garlic. Sauté for 2-3 minutes.
Step 3
3. Add the mince and break apart with a spoon whilst cooking for 5-8 minutes or until browned. Season with salt, pepper and italian herbs.

4. Add the mushrooms and zucchini and cook for 5 minutes.
Step 5
5. Add in tomato paste and stock and mix to combine.
Step 6
6. Add in the cooked gnocchi, diced tomatoes and yoghurt and stir to combine. 7. Reduce heat to low and stir in the spinach.
Step 7
8. Divide into four serves and store leftovers in the fridge. When ready to serve, sprinkle with 30 gms of parmesan cheese.
