Instructions
Step 1
Season chicken breasts / thighs and fry until brown
Step 2
Remove chicken and added chopped onion, pepper and celery to pan - 4-5mins
Step 3
Add oregano, fresh garlic and tomato puree and stir
Step 4
Add rice and stir in then add wine, stock and tinned tomatoes and stir
Step 5
Add chicken back to the pan and add fresh tomatoes, olives and lemon juice and slices
Step 6
Cover and cook for 35-40 mins
