Instructions
Step 1
Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft.

Add crushed tomatoes, broth, and bring to a boil. Reduce heat and let simmer for 10 minutes.

Stir in milk and half of the crab meat, cook for another 5 minutes. Season with salt and pepper to taste.

Blend the mixture until smooth using a hand blender. Keep warm.

Preheat a skillet over medium heat. Split croissants in half and layer with remaining crab meat, cheese, mayonnaise, and mustard.
Step 6
Grill the croissants in the skillet until the cheese is melted and the croissants are golden brown on both sides.
Step 7
Serve the bisque in bowls, garnish with parsley if using, and enjoy with the crab-stuffed grilled cheese croissants.
