Instructions
Step 1
Zest 1 tsp of lemon and squeeze 2 Tbsp of juice.
Step 2
Meanwhile, cook pasta according to package directions. Reserve 1/2 cup pasta water.
Step 3
Melt 2 Tbsp butter over medium low heat. When foaming begins to subside, add shallot and saute.
Step 4
Stir in Mascarpone cheese and stir until it begins to loosen. Add white wine and stir. Add in lemon zest and juice.
Step 5
Stir in Parmesan and salt. Cook 5 minutes or until heated. Add in 1/4 cup of pasta water, stirring in more as needed to desired sauce thickness.
Step 6
Add pepper to taste and stir in pasta. Garnish with parsley.
