Instructions
Step 1
Preheat oven to 400°. Bake the sweet potatoes for 45-50 minutes, or until fork tender.
Step 2
While sweet potatoes bake, prepare the topping. Saute the apples in 1 tbsp of butter until tender (about 5 minutes). Stir in the cranberries, a pinch of salt, and the brown sugar. Remove from heat.
Step 3
Sliced the sweet potatoes lengthwise and scoop out the insides leaving a little in the shell. Mash the sweet potatoe Filling with the remaining butter, then fold in the apple-brown sugar mixture & half the cheese.
Step 4
Refill the potato shells with the filling and top with the rest of the cheese. Bake at 375° for 10-15 minutes until warmed through and the cheese is melted. Top with optional rosemary or thyme.
