Ingredients

1 lbchicken breast
or thighs, cubed or shredded
½ cupred lentils
¼ cuponion
diced
½ cupcarrots
diced
½ cupspinach
or kale, chopped
¼ cuptomatoes
crushed, or 2 tbsp tomato paste
0.5roasted red pepper
chopped, optional but adds depth
1 Tbspolive oil
1 tspsmoked paprika
(+ 1/4 tsp extra for bolder flavor
½ tspcumin
½ tspgarlic powder
black pepper
to taste
3 cupslow-sodium chicken broth
Lemon juice
or parsley to finish
Instructions
Step 1
Sauté onion and carrots in olive oil 3–4 min.
Step 2
Add chicken, lentils, tomatoes, broth, and spices. Simmer 20–25 min until lentils soften.
Step 3
Stir in greens and roasted red pepper; cook 3 min more.
Step 4
Finish with a splash of lemon juice or parsley for brightness.
