Instructions

Over night soak

Step 1
Rinse and sort beans a few times & remove possible rock pebbles. (Rinse black beans until water is clear).
Step 2
Place beans in a large pot Add cool water to cover beans about an inch above top layer, soak overnight (about eight hours).
Step 3
In the morning, rinse the beans again, stir, rinse, drain.
Step 4
Put beans in a pot. Cover with tap water to an inch above top layer. Stir. Turn on heat, cover. Cook about 4 hours.
Step 5
**Note: At about 2 hrs. add a teaspoon of baking soda (for gas). Stir.
Step 6
At 3 hrs. add bacon which is sliced 1-2 inches. Stir.
Step 7
At 4 hours test for softness of bean, (may add flour or corn starch mixed with cold water to make a paste to thicken bean broth). Add salt to taste. Stir and eat.
