Spinach & Artichoke Stuffed Shells (With Tomato Sauce)
Makes 6 servings
Ingredients
1 lb large pasta shells, blanched
1-10 oz box frozen spinach, chopped
2 14 oz cans artichoke hearts, chopped
2 8 oz packages cream cheese
1/2 cup parmesan cheese, shredded
1/2 cup sour cream
1 tsp kosher salt
1/2 tsp white pepper
1 can tomato sauce
Directions
11. Blanch the shells in boiling water for 8 minutes. Drain, shock in cold water.
12. Combine all of the other ingredients for the filling, and stuff each shell with 2 tablespoons of filling.
13. Place shells in an oven safe serving dish with 1/4 cup of water in bottom.
14. Spread desired amount of tomato sauce over the top of shells.
15. Cover the dish with aluminum foil, bake at 350°F for 30 minutes.
