Instructions

Brown the meat

In a large pot, cook the beef (or beef + turkey combo) until browned.

Drain excess fat if needed.

Add aromatics

Add onion + garlic.

Cook until soft, 3–4 minutes.

Add all veggies except spinach

Bell peppers, zucchini, mushrooms, cauliflower rice, carrots.

Stir and cook 4–5 minutes.

Add the tomato base

Crushed tomatoes

Diced tomatoes

Add beans + seasonings

Chipotle peppers + adobo

Chili powder, smoked paprika, cumin, oregano, salt, pepper

Cover and simmer 30–45 minutes, stirring occasionally.

Add water or broth if it thickens too much.

Add spinach + cheese

Stir in spinach to wilt.
