Ingredients

250grolled oats
old-fashioned, not instant
½ cupbuckwheat groats
raw, hulled, not toasted
½ cupraw sunflower seeds
½ cuppumpkin seeds
raw, pepitas
¼ cupflax seeds
whole or ground
20gchia seeds
¼ cuphemp hearts
½ cupunsweetened shredded coconut
3gsea salt
3gground cinnamon
0.5gnutmeg
optional
⅓ cuppure maple syrup
⅓ cupcoconut oil
melted
1 teaspoonvanilla extract
½ cupnuts
chopped, almonds, walnuts, or pecans, OPTIONAL, add after baking
½ cupdried fruit
cranberries, raisins, or cherries, OPTIONAL, add after baking
Instructions
Step 1
1. Preheat oven to 325 °F (165 °C). Line a large baking sheet with parchment paper.

2. In a large bowl, combine all dry ingredients and stir well.

3. In a small bowl, whisk together the maple syrup, oil, and vanilla until smooth.
Step 4
4. Pour the wet mixture over the dry mixture and stir until evenly coated.

5. Spread evenly on the prepared baking sheet (about ½ inch / 1 cm thick).

6. Bake 35–40 minutes, stirring once halfway through.
Step 7
• Keep an eye around the 30-minute mark — shredded coconut browns quickly.

7. Allow to cool completely; it will crisp as it cools.

8. Once cool, stir in any optional nuts or dried fruit.

9. Store in an airtight container for up to 3 weeks at room temperature or 3 months in the freezer.
