For the Dough
250gflour
50gvegan vanilla protein
or more flour
7gdry yeast
salt
50gcoconut sugar
50gvegan butter
150gpumpkin purée
For the Filling

Let the dough rise in a bowl and cover it with a clean kitchen towel in a warm (not hot!) place.

Once the dough has risen (about 45-60min), preheat the oven to 200*C/ 400*F.

Knead the dough again on a floured work surface, roll out in a rectangle about 0.5cm thick and melt the vegan butter at the same time.
Step 4
Prepare the filling and coat the dough with it (up to the edges). It is best to leave some of the filling to set aside. Roll it up and cut individual slices using dental floss or a sharp knife.

Place in a greased baking dish and let it rise, covered, for another 15-20 minutes. (This really makes a difference - so don’t skip this step!).

Bake the cinnamon buns for 12-15 minutes until golden brown. The exact baking time depends on the oven - so keep checking back.

Remove the cinnamon buns from the oven and cover with the remaining filling. Due to the high baking temperature, this will provide a sweet, caramelized surface.

Optionally, prepare the icing and pour it over the cooled cinnamon buns.
