Instructions
Step 1
Cut each chicken breast into 3 pieces,
Put into small pot,
Cover with about half enchilada sauce,
Cook on low-medium heat until cooked through ~20 minutes,
Stir occasionally
Step 2
Preheat oven to 375,
Remove chicken and shred with fork
Step 3
Pour remaining enchilada sauce to cover bottom of 8x8 casserole dish,
Place 2 tortillas on bottom,
Then 1/3 of chicken, 1/3 of enchilada sauce, 1/3 of jalepeno, and 1/3 of cheese - repeat 3 times
Step 4
Bake 20-30 minutes uncovered,
Optionally garnish with cilantro and green onion
