Instructions
Step 1
Cut the onions in half lengthwise and slice into 1/4 inch slices.
Step 2
Combine soy sauce, sake, mirin, and dashi in a bowl.
Step 3
Heat sesame oil in a large skillet over high heat. Add the beef and cook, stirring frequently, until the beef browns slightly.
Step 4
Add the sugar and onion, and cook for about 1 minute, stirring constantly.
Step 5
Pour the liquid mixture into the skillet and simmer for about 5 minutes until the beef is cooked through. Skim off any scum and fat.
Step 6
Divide the rice among 4 large bowls, spoon the gyudon over the rice, and serve immediately.
Step 7
Top with shichimi togarashi and beni shoga, if desired.
