Instructions

Step 1
Using a food processor pulse the dry ingredients until combined. Add the 5 tbsp of butter and pulse until the mixture resembles sand. Add the Egg yolk, water and lemon juice and pulse until the dough comes together. Form a 5 inch square, wrap with plastic wrap and refrigerate for 2 hours. Add the remaining butter (3 and 1/2 sticks) and flour (1 cup) and process until the mixture resembles fine gravel. Form a five inch square and refrigerate.

Step 2
Roll the dough out to measure 8 by 10. Place the butter block on right side of the dough and enclose it with the left side making sure to flute the top, right and bottom sides.
Step 3
Working as fast as possible roll the dough out to a 10 by 12. Begin the book fold technique a total of 3 times
