Instructions
Step 1
Sauté onions and bell pepper over medium heat with olive oil until cooked. Add in a scoop of garlic and the ground beef & sausage. Mash it and cook until browned, add in one packet of chili seasoning.
Step 2
Drain fat with a paper towel.
Step 3
Add meat and vegetables to a crockpot. Add in 2 cans of drained and rinsed kidney beans, 2 cans of chili bean pintos(don't drain), 2 cans of rotel, 2 cans of tomato sauce, another scoop of garlic, the 2nd chili packet and the seasonings. Cover and cook on high for 4 hours or low for 6-8.
Step 4
Stir every hour. In the last hour of cooking, add in 1/2 can of tomato paste and stir in.
Step 5
After it's done, top with shredded cheese, sour cream, and crushed up Fritos. And don't forget the cornbread!
