Step 1
Mix brown sugar, soy sauce, white sugar, water, white wine vinegar, rice vinegar, and ground ginger in a saucepan; bring to a boil. Reduce heat to medium-low and cook until reduced by half, about 30 minutes. Step 2: let glaze cool about one hour.

Note: best to use a 6qt stock pot. Keep a close eye on the sauce. It tends to over boil if the heat is to high. If it happens, reduce heat to low.
