Instructions

Step 1
1. Heat olive oil or butter in a large skillet over medium heat.
Step 2
2. Add the diced potatoes and cook 8–10 minutes, stirring occasionally, until golden and mostly tender.

3. Add onion and bell pepper; cook 3–4 minutes until softened.
Step 4
4. Stir in pinto beans, garlic powder, paprika, salt, and pepper.
Step 5
5. Cook 3–5 minutes until everything is heated through and seasoned well.
Step 6
6. In a separate pan, cook the eggs to your liking (fried, over-easy, or scrambled).
Step 7
7. Serve the skillet topped with the eggs and any optional toppings.
