These are breakfast burritos that are wrapped in rice paper wraps; which makes them gluten free.

Instructions
Step 1
Cook off the bacon and set aside.
Step 2
chop up the tomato and season with salt, pepper and olive oil. You can use bacon fat instead of olive oil too.
Step 3
Wash, pick and chop up the basil.
Step 4
Shred the cheese and set aside.
Step 5
scramble the eggs and cook in a non stick pan on medium high eat until cooked, season with salt.
Step 6
Dip the rice paper wraps in water to hydrate for 3 seconds. Lay down and fill with each ingredient and roll like burrito. Fold over, tuck in the sides and roll over and roll until sealed.
