Step 1
Warm the oil in a large saucepan over a medium heat and gently fry the onion until softened but still pale. Add the garlic and spices and stir for a minute. Add the lentils, tomatoes and stock and bring to the boil. Simmer for around 30mins.
Step 2
Adjust the seasoning if required, serve topped with feta, herbs and lemon juice (optional).
